Bristol roasts; Part one - Pasture
Full disclosure, this isn’t a vegan friendly post…
If you haven’t been to Pasture, let me explain. It is a steakhouse and bar, with a venue in Bristol, and one in Cardiff. They specialise in fire-based cooking and local ingredients. You can order steaks by weight to share (or eat by yourself, you know there would never be judgment from me), as well a fabulous roast dinner option (which you can have with he aforementioned steaks as well) on a Sunday.
I would usually go for pork on a roast, because beef can often be disappointing. But I thought if beef was going to be good anywhere, it was going to be good here. And I was NOT disappointed. It said “served pink” and it was; perfectly pink, perfectly cooked. Every meat comes with a yorkie, as it should be IMO, I will fight you to the death over this if you disagree. The sides were super generous and each one cooked beautifully; greens, roast potatoes, and spinach and leek gratin. We also had the “Cabbage in the coals with bacon butter”, which was a great addition (not that we were able to finish everything, but the leftovers came home for bubble and squeak tomorrow). It was all that you want from a traditional roast dinner, whilst also being anything but traditional.
Start with a perfectly poured negroni, top up with a delicious Malbec and finish with a sweet caramelised canelé and honestly you have yourself a perfect Sunday.
